Abstract:
In today's world, preservatives, especially chemical preservatives, play a very useful role in our human lives. The harmful effects of chemical preservatives, including carcinogenic effects and toxic residues on human health, are proven every day, and the demand for food products whose life and shelf life is increased naturally increases. Today, along with the increase in the production and processing of fruits and vegetables, there are many by-products, and citrus pomace is one of the by-products that has valuable substances such as pectin and can be beneficial both economically and environmentally. Also, pectin is widely used in various industries, including medical and food industries, which is used as a preservative, gel maker, thickener and emulsion stabilizer in most foods. The purpose of this research is to extract pectin from citrus waste as a natural preservative to replace chemical preservatives.
This project has been carried out in the field and library method using books, articles and reliable websites and in the school laboratory environment. The pectin extracted from the orange peel was used in food, including tomato paste, and finally a favorable result was obtained in its later spoilage.
