Abstract: |
In this study, the effect of cold plasma on reducing the microbial load of wheat bran was evaluated. With the design expert software and based on the response surface method (RSM) and the central composite design, two variables of cold plasma process application time (18-5 minutes) and applied power (35-65 W) were considered, and the reduction rate of bran microbial load from Anaerobic sulfite-reducing bacteria (Clostridium species ) were evaluated. The results showed that by increasing the power and time of cold plasma treatment, the viability of Clostridium bacteria decreases. So that the lowest number of colonies of this bacteria was seen in the treatment where the highest power level of plasma was applied (power 65) and the longest time (18 minutes of the process). It can be said that the free radicals resulting from the cold plasma process and the effect on membrane structures, especially proteins, can cause the inactivation of these bacteria |
