Ultrasound technology in agricultural products drying, challenges and opportunities

Abstract:
One of the most important challenges in the field of agricultural and food products is quality preserving and increasing shelf life, especially for products that have a short harvesting period. One of the ways to increase shelf life is drying. Industrial dryers usually operate based on convection and hot air flow, requiring a lot of time and energy. In this research, high-intensity ultrasound in combination with heat was introduced and studied as a new technology, and also the challenges and prospects of industrialization of this technology were investigated. According to the literature conducted in the field of ultrasound-assisted drying, there is no limit to the type of product in the use of this technology. In other words, this technology can be used for all types of agricultural and food products. On the other hand, to implement this technique, almost a lot of capital is required, while there is little expert in this field. On the other hand, the optimal conditions of ultrasound are different in products and many studies should be done in this field. But this technology is a suitable alternative to traditional methods and has been successfully used in laboratory and semi-industrial scales. However, it is expected that we will see the industrialization of this technology in the not too distant future.
