The effect of temperature, time and the use of ultrasonic waves on the process of moistening Deiri dates in Khuzestan

Abstract:
In this research, the effect of the humidification process on softening and increasing the desirability and quality of Deiri dates under the influence of ultrasound waves at two levels (with ultrasound and without ultrasound), three levels of water temperature (30, 50 and 70 degrees Celsius) was investigated. Qualitative characteristics such as weight gain percentage, moisture percentage, color indices L, a, b, ∆E, total sugar, reduced sugar, textural characteristics such as texture firmness, chewability, gumminess and springiness were investigated. To analyze the results, the response surface method (RSM) with the central cube test design (CCD) was used in the Design Expert 10 software environment. The results showed that the proposed regression model was significant in determining the effect of humidification on weight gain, percentage of moisture and reduced sugar, total sugar, color indices L and ∆E, firmness, chewiness, cohesiveness and springiness of the treated samples. The difference in weight, percentage of moisture and regeneration sugar of the samples treated with ultrasonic humidification was 12.12, 7.47 and 46% respectively, which shows the effect of ultrasonic treatment on the samples. Color indices a and b were insignificant at the 0.05 level. Based on the optimization, the temperature level of 40 degrees Celsius and the time of 85 minutes with the application of ultrasound can be stated as the optimal conditions for the humidification process of the long date fruit under test. Considering the effect of ultrasound waves that was only effective on a few traits, the use of ultrasound does not seem justifiable.
