Abstract:
Spices are products that are prepared from different organs of aromatic plants and are widely used all over the world due to their medicinal properties. Powdered spices are usually very dry and moisture-loving. Therefore, their storage, packaging and transportation processes require special care which increase their maintenance costs. To overcome these problems, compressing spice powder in pill form is a suitable solution. To overcome these problems, compressing spice powder in pill form is a suitable solution. In this research, spice powder including pepper powder was used to produce cylindrical tablets to check their physical properties. The purpose of this research was to find the optimal point for tableting variables by considering the pressure variables of the tableting process and its mold diameter. The independent variables for tableting from black pepper powder included five levels of loading pressure and five levels of mold diameter (10, 14, 18, 22 and 26 mm). The dependent variable was compression percentage. The statistical analysis of the data and the optimization of the tableting process were done using the response surface method and the central composite design.
