A review of past research on refractance window dryers: investigation of the principles of dryer operation and the quality characteristics of the dried product.

Abstract:
Drying is one of the oldest methods for product preservation. Refractive window dryer (RW) is one of the fourth-generation dryers, and the favorable characteristics of drying with this dryer have been reported in research. In this research, the principles of drying and the quality characteristics of the product dried with this method were examined by reviewing the previous researches. The results showed that the RW dryer is a good option for drying products containing heat-sensitive compounds, and the color changes of the product are in a favorable condition. According to the results obtained from the research, retention of bioactive compounds such as phenol, flavonoid, antioxidant and some other compounds such as ascorbic acid and anthocyanin in RW dryer is favorable and is better than convection dryers. In general, it can be said that the quality of the product dried by the RW method is a little lower than that of freeze dryers, but other advantages such as lower construction costs and less energy consumption compared to freeze dryers made this dryer have a high potential for industrial development.
